So last night was our Ward's (congregation at church) Relief Society (Women's organization at church) Enrichment meeting. We had a cook-off, which was a lot of fun. I signed up for a dessert, and made a cake. It sure smelled good. Here's the recipe.
1 Yellow cake mix
4 eggs
1/2 cup oil
1 can mandarin oranges (with juice)
Mix all 4 ingredients together until orange pieces are broken up, and it's nice and fluffy. Pour into 2 greased round pans. Cook at 350 until done. Ha! Do you like how percise I am. Just tap the top, and if it's springy, then it's done. Cool the cakes.
1 tub cool-whip
1 3oz package vanilla pudding (instant)
1 can crushed pineapple
Mix all 3 ingredients together (including pineapple juice) to make your frosting. Layer and frost the cake, then chill. It sure smelled good (remember, I'm dieting - hehehe).
So, there were about 8 main dishes, 8 salads, 8 jellos (yeah, since when is Jello it's on course?), and 8 desserts. They has small cups, which were numbered, filled with each food. It was a taste testing kind of thing. I had fun smelling my mom's cups. I was good, no cheating for me! I'm 13-14 weeks into my program, and only 12 lbs away from my goal, and I'm not messing it up now :)
So, if you need a fun activity to do in your Enrichment meetings, this is definitely a go!

OH MY GOSH!! That's my favorite cake!!! My Mother in law makes it and calls it a Mandarin Orange Cake. Our church Members LOVE IT! I could eat half of it if I tried....I'd be sick later but MAN IT'S GOOD! You all should try it!!! Ok Now I have to go get the stuff to make one!!!

We call it Pineapple cake...and it is always a request at birthdays, especially from my dad. It so funny to see it here...just when I thought we had something special...LOL!!!!

We call it Pig Picklin' Cake! I've had the recipe about 25 years. Our recipe calls for letting it sit for three days before serving so it gets all nice and soaked!
